Breakfast Quesadillas

Eggs, cheese and bacon pieces are folded inside a soft tortilla then toasted to melty goodness! These small sized tortillas make the perfect sized breakfast quesadillas and can make a creative egg appearance!
It was a privilege to eat one of these for breakfast one morning (thank you, Jen!) While we were chatting that morning, Jen quickly fried eggs, placed them into tortillas with mozzarella cheese and bacon bits then toasted each side (also all done in one pan!) That was one delicious egg quesadilla. You can make these so many different ways! Jen has mentioned tomatoes and parsley and I’m sure the possibilities are broad in choice! These make the perfect individual portions and are kid friendly! Jazz up your eggs by making these fun little breakfast quesadillas in the shape of an omelet!

How do I make eggs with tortillas?
To make eggs with tortillas, scramble or cook an egg to your preference and place into a soft tortilla. Add whatever toppings you like with your eggs and toast or microwave once filled. Fold tortilla in half to create half-moon shapes like I did or place another tortilla over the top as Pioneer Women did in her breakfast quesadillas.

Ingredients for breakfast quesadillas:
  • 2 eggs
  • 2 small (6-inch) tortillas
  • 1 bacon strip, crumbled (or 2 TBSP of bacon bits)
  • 1/2 cup of shredded cheddar cheese, divided
  • 4 TBSP of canola oil, divided for frying and toasting

How to make breakfast quesadillas with egg, cheese, and bacon:
1. Preheat 2 TBSP of oil in a small non-stick skillet over medium heat. Crack in two eggs and fry eggs 1-2 minutes on each side or until done to your preference.
2. Place each egg into a folded tortilla and top with 1/4 cup of cheese and 1 tbsp of bacon bits. Add the remaining 2 TBSP of oil back to the frying pan and toast the tortillas on each side until golden over medium-low heat.
